Jalapeno Poppers Recipe


These jalapeno poppers make a great appetizer for parties. They are basically stuffed jalapeno peppers that are breaded and fried. The filling ingredients include cream cheese, cheddar cheese and bacon bits. You can adjust the amount of bacon bits to your taste. When you are slicing and seeding the peppers it might be a good idea to wear rubber gloves because they can burn your hands if you are not careful. This recipe can easily be double for tripled if you want to make a batch for a large group of people. Enjoy.

Ingredients:
12 ounces cream cheese (softened)
1 (8 ounce) package shredded cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers (seeded and halved)
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
2 quarts oil (for frying)

Cooking Instructions:

Step 1: In a medium mix combine cream cheese, cheddar cheese, and bacon bits. Spoon the mixture into each of the jalapeno pepper halves.

Step 2: In a small bowl add the milk, and in another small bowl add the flour. In a shallow pie dish add the breadcrumbs. Dip the jalapenos first in milk, then into the flour, ensuring that they are well coated. Allow to set for 10 minutes. Dip the jalapenos in the milk again, and then roll in breadcrumbs.
Step 3: In a deep fryer (or deep skillet) heat oil to 365 degrees. Deep fry coated jalapenos in batches for 2 to 3 minutes until golden brown. Remove and drain on paper towels.

Pulled Pork Sandwiches Recipe


Pulled pork sandwiches are in my top favorites when it comes to slow cooker recipes. The slow cooker basically does all of the work for you. The secret to this recipe is simmering the pork with root beer in the slow cooker. After the pork is finished cooking it is pulled apart and mixed with your favorite BBQ sauce. The meat is then put onto buns and topped with coleslaw. For the BBQ sauce and coleslaw, you can use your favorite recipe, or I would recommend my recipes for BBQ sauce and Coleslaw. If you want to save time you can buy them both from the store. This is another great recipe for game day. Enjoy.

Ingredients:
1 (2 pound) pork tenderloin
1 (12 ounce) can root beer
1 (18 ounce) bottle barbecue sauce
8 hamburger buns
Coleslaw

Cooking Instructions:

Step 1: Place the pork tenderloin into a slow cooker and pour the root beer over the meat. Cover and cook on low until the pork falls apart and shreds easily (about 6 to 7 hours). Drain the juices and pull the pork apart with two forks until it is shredded. Stir in BBQ Sauce and warm in the slow cooker.
Step 2: Place some of the pork onto the bottom of each hamburger bun, top with coleslaw and place the other half of the bun on top.

Nachos Grande Recipe


If you’re looking for the perfect appetizer Nachos Grande might be right for you. Nachos Grande is refried beans, a seasoned beef mixture, cheese, jalapenos and green onions on top of tortilla chips. You can also add additional toppings such as lettuce, black olives, tomato, salsa, sour cream, and guacamole. The nachos are first layered and then baked in the oven until the cheese has melted. If you don’t have the various seasonings, ½ of a package of taco seasoning will work instead. Enjoy.

Ingredients:
1/2lb ground beef
1 teaspoon chili powder
½ teaspoon salt
½ teaspoon dried onion flakes
1/8 teaspoon paprika
2 tablespoons water
½ cup refried beans
1 ½ cups shredded cheddar cheese
½ cup shredded Monterey jack cheese
¼ cup green onion (sliced)
1 large jalapeno pepper
restaurant style tortilla chips

Cooking Instructions:

Step 1: Pre-heat the oven to 375 degrees. In a medium skillet over medium heat cook the ground beef until it is browned. Use a spatula to crumble the beef into small pieces as it cooks. When the beef is no longer pink drain off any excess fat.
Step 2: Season the beef with chili powder, salt, dried onion flakes, paprika and water. Simmer over medium/low heat for 10 minutes. Heat the refried beans in a small saucepan over low heat (or in the microwave for a couple minutes).
Step 3: Arrange tortilla chips on a baking sheet or oven safe ceramic plate. Spread about a tablespoon of the refried beans on each chip. Sprinkle a couple tablespoons of the beef on top of the beans on each chip. Pile cheese on top of the beef on each chip and top with green onions and sliced jalapeno peppers. Place into the oven and bake for 8 to 10 minutes or until the cheese has melted.

How to Make Guacamole


If you are wondering how to make guacamole, this tutorial is perfect for you. Guacamole makes a great dip, and goes well with just about any Mexican dish. At times I will like to eat my guacamole with tortilla chips, but I also frequently put it on tacos and hamburgers. There is nothing complicated about making guacamole, it basically consists of mashing together avocados with various spices. This is the perfect dip to prepare for the Play-offs and the upcoming Super Bowl. Enjoy.

Ingredients:
3 avocados (halved, seeded, and peeled)
1 lime (juiced)
½ teaspoon salt
½ teaspoon ground cumin
½ teaspoon cayenne pepper
½ medium onion (diced)
2 Roma tomatoes (seeded and diced)
1 tablespoon fresh cilantro (chopped)
1 garlic clove (minced)

Cooking Instructions:

Step 1: In a large bowl add the avocados and the lime juice, Mash them together and toss to coat. Add salt, cumin, cayenne pepper and mix well.
Step 2: Fold in onion, tomatoes, cilantro and garlic. Let sit for 1 hour and serve.

Reuben Dip Recipe


It’s amazing some of the things you can make a dip out of, as is the case with this Reuben dip. This dip combines your favorite ingredients from a Reuben Sandwich in a dip form.  Basically if you enjoy Reuben sandwiches you are sure to like this dip. This dip combines a mayonnaise and Thousand Island dressing mixture with sauerkraut, corned beef and Swiss cheese. This is something totally different and delicious for a snack or for your Super Bowl or Play-off parties. This dip goes great served with wheat cracker or small pieces of rye bread. Enjoy.

Ingredients:
½ cup mayonnaise
½ cup thousand island dressing
16 ounces sauerkraut (rinsed and squeezed dry)
8 ounces shredded corned beef
16 ounces shredded Swiss cheese

Cooking Instructions:

Step 1: Preheat the oven to 350 degrees. In a small bowl combine mayonnaise and Thousand Island dressing. Mix well.
Step 2: Spread sauerkraut into a 9×13 inch baking dish. Layer corned beef, swiss cheese, and the mayonnaise mixture on top of the sauerkraut. Place into the oven and bake for 20 to 25 minutes.

Chili Con Queso Recipe


Chili con queso is a popular Tex-Mex appetizer. It originated in Texas and has become popular across the United States. Chili con queso is basically cheese melted with peppers. It is meant to be served warm and It is eaten with tortilla chips. What I like about this recipe is that it uses a lot of fresh ingredients like tomatoes, peppers and cilantro. This appetizer could be cooking using numerous methods. You could cook it in the microwave, on the stove top, or in the slow cooker. I chose the slow cooker method because it is easy to keep warm. A lot of the ingredients in this recipe can be adjusted to your taste. For example, if you want more spice, add more jalapeno peppers than 3. This is a perfect recipe for Game Day! Enjoy.

Ingredients:
1lb Velveeta Mexican Cheese
12 ounces cream cheese
3 tomatoes (chopped)
1 bunch green onions (chopped)
3-6 jalapeno peppers (seeded and chopped)
2-3 garlic cloves (minced)
½ bunch cilantro (chopped)
black pepper (to taste)

Cooking Instructions:

Step 1: In a microwave safe dish melt Velveeta and cream cheese until smooth. Stir in tomatoes, green onions, jalapeno peppers, garlic, cilantro and black pepper. You can also use a slow cooker or melt the cheeses on the stove top.
Step 2: Serve warm and eat with tortilla chips.

How to Make Boneless Chicken Wings


You may be wondering how to make boneless chicken wings. Luckily boneless chicken wings are very easy to make and the truth is, there is really no such thing as a boneless chicken wing. Boneless chicken wings are simply breaded pieces of chicken breast. Popular chains like Buffalo Wild Wings have made these extremely popular. What I like about boneless wings instead of your normal chicken wing is that they are far less messy. They are very easy to eat with a fork and you don’t have to worry about bones. In this article I explain how to make a crispy breaded that can be used for all of the sauces. I also introduce recipes for 5 of my favorite wing sauces. These sauces include buffalo, honey BBQ, Parmesan garlic, Asian, and Caribbean jerk. Fans of a lot of spice are sure to enjoy the buffalo, Asian, and Caribbean jerk sauces. Those who like a more mild sauce will enjoy the honey BBQ and the parmesan garlic. With the playoffs coming up and the Super Bowl right around the corner, these are perfect for Game Day.

The first thing you are going to want to do is bread the chicken pieces and fry them. This is a universal breading that will work perfectly for all of the sauces in this post. The sauces can be prepared in advance or while the chicken tenders are frying.

Ingredients:

3 boneless skinless chicken breasts (cut into 1” chunks)
Oil (for deep frying)
1 cup all purpose flour
2 teaspoons salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
½ teaspoon paprika
1 egg
1 cup milk

Cooking Instructions:

Step 1: Heat oil in a deep-fryer to 375 degrees. In a large bowl combine flour, salt, black pepper, cayenne pepper, garlic powder, and paprika. In a small bowl whisk together egg and milk. Dip each piece of chicken in the egg mixture, and then roll in the flour mixture. Repeat so that each piece of chicken is double coated. Refrigerate the breaded chicken for 20 minutes.
Step 2: Fry chicken in the hot oil in batches until the outside is nicely browned and the juices run clear (about 5 minutes per batch). Drain on paper towels. Repeat until all of the chicken is gone.
Step 3:
Mix fried chicken bits with your favorite wing sauce (sauce recipes found below).

Now, here are the sauces. The sauces can be prepared in advance or while the chicken bits are frying. I have recipes for 5 different types of delicious wing sauces. Most of these sauces will make a lot, so they will be able to cover large batches of boneless wings.

Buffalo Wing Sauce-

Ingredients:
¼ cup hot pepper sauce
1 tablespoon butter

Cooking Instructions:

Step 1: Combine hot sauce and butter in a small bowl. Microwave on high until the butter has melted (about 20 to 30 seconds). Mix well. This recipe can easily be double if you are making a large amount of wings.

Honey BBQ Wing Sauce-

Ingredients:
1 ¼ cups ketchup
1/3 cup white vinegar
¼ cup molasses
¼ cup honey
1 teaspoon liquid smoke flavoring
½ teaspoon salt
¼ teaspoon onion powder
¼ teaspoon chili powder

Cooking Instructions:

Step 1: In a small saucepan over medium heat combine all of the ingredients. Stir until well combined and bring to a boil. Reduce heat and simmer uncovered for 15 to 20 minutes.

Parmesan Garlic Wing Sauce-

Ingredients:
4 garlic cloves (peeled)
1 teaspoon olive oil
½ cup mayonnaise
2 tablespoons light corn syrup
5 teaspoons grated parmesan cheese
1 tablespoon white vinegar
1 teaspoon lemon juice
½ teaspoon salt
½ teaspoon crushed red pepper flakes
¼ teaspoon dried basil
¼ teaspoon dried marjoram
¼ teaspoon dried oregano
¼ teaspoon dried thyme
1/8 teaspoon ground black pepper

Cooking Instructions:

Step 1: Pre-heat the oven to 350 degrees. Toss garlic cloves with olive oil in a small oven safe dish. Bake in the oven for 20 minutes or until the garlic cloves began to turn light brown. Remove from the oven, cool garlic, and finely mince with a sharp knife.
Step 2: Combine garlic and the remaining ingredients in a small bowl. Stir well, cover and chill for several hours before using.

Asian Wing Sauce-

Ingredients:
2 teaspoons cornstarch
4 teaspoons rice wine vinegar
½ cup corn syrup
1/3 cup sugar
¼ cup chili-garlic sauce
1 teaspoon soy sauce
1 teaspoon lemon juice
¼ teaspoon ground ginger
¼ teaspoon salt
¼ teaspoon garlic (minced)

Cooking Instructions:

Step 1: In a small bowl mix cornstarch with rice vinegar. Set aside. In a small sauce pan combine remaining ingredients. Add the cornstarch and rice vinegar mixture and mix well.
Step 2: Bring the mixture to a boil, reduce heat the simmer until it becomes thick. Remove from heat, allow it to cool then cover and chill it until ready to use (you can also use it right away if the chicken is ready).

Caribbean Jerk Wing Sauce-

Ingredients:
3 tablespoons butter
2 tablespoons green onion (minced)
1 cup water
¾ cup ketchup
½ cup dark brown sugar
¼ cup apple cider vinegar
2 tablespoons hot sauce
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
1 ½ teaspoons cayenne pepper
1 teaspoon cornstarch
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
1/8 teaspoon ground cloves
1/8 teaspoons nutmeg
1/8 teaspoon allspice
1/8 teaspoon sage
1/8 teaspoon thyme

Cooking Instructions:

Step 1: In a small saucepan sauté onion in butter over medium heat. Whisk in the remaining ingredients and bring to a boil. Reduce heat and simmer for 45 minutes.
