Caesar Pork Chops Recipe


There are so many different ways to prepare pork chops and this method is pretty unique and delicious. These pork chops have an amazing flavor that comes mostly from Caesar salad dressing. If you enjoy Caesar dressing, you will love this recipe. This recipe for Caesar pork chops is so easy to prepare and only consists of 5 ingredients. The pork chops are first coated with flour, then dipping in Caesar salad dressing, and finally sprinkled with shredded parmesan cheese. The pork chops are baked in the oven for about 40 minutes and ready to serve. This recipe calls for bone-in pork chops but you can use boneless pork chops as well. I like to serve these with baked or mashed potatoes. Enjoy.

Ingredients:

¼ cup flour
½ cup Italian seasoning
½ cup creamy Caesar salad dressing
4 pork loin chops with bone (about ½ inch thick)
½ cup shredded parmesan cheese

Cooking Instructions:

Step 1: Preheat the oven to 375 degrees. Spray a 12 x 8 inch glass baking dish with cooking spray. In a pie plate or shallow dish, mix together flour and Italian seasoning. Pour the Caesar salad dressing into another pie plate or shallow dish.
Step 2: Coat both sides of each pork chop with the flour mixture, then dip into the Caesar salad dressing, coating both sides well. Sprinkle the tops of each pork chop with shredded parmesan cheese.
Step 3: Place into the oven and bake uncovered for 35 to 40 minutes or until fully cooked (the internal temperature has reached 145 degrees).

Chicken and Broccoli Lo Mein Recipe


Chinese chicken and broccoli is amazing as it is but when you add linguini into the mixture it’s even better! If you are not familiar with Lo Mein it is a Chinese noodles dish consisting of usually meat and vegetables. This is another one of my favorite items to get at the Chinese buffet. The chicken in this recipe is stir-fried and the sauce consists of ingredients such as soy sauce, oyster sauce, cornstarch and water. This dish gets a little heat from crushed red pepper flakes, you can add as much as you want depending on how spicy you want it. This goes great both as a one dish meal or could be served as a side dish with your favorite Chinese food. Enjoy.

Ingredients:
6 ounces linguini
2 tablespoons sesame oil
3 tablespoons oyster sauce
3 tablespoons soy sauce
2 teaspoon cornstarch
½ cup water (divided)
2 tablespoons vegetable oil (divided)
1lb boneless skinless chicken breasts (cut into thin strips)
12 ounces broccoli florets
4 green onions (chopped)
2 garlic cloves (minced)
Crushed red pepper flakes (for sprinkling)

Cooking Instructions:
Step 1: Bring a large pot of salted water to a boil. Add linguini and cook according to package directions (until al dente). Drain and rinse under cold water. Toss the linguini with sesame oil.
Step 2: While noodles are boiling, in a small bowl combine oyster sauce, soy sauce, corn starch and ¼ cup of cold water. Mix well.
Step 3: Heat 1 tablespoon of vegetable oil in a wok or skillet over medium-high heat. Add half of the chicken to the wok and stir-fry until fully cooked (the internal temperature has reached 165 degrees). Remove from the pan and transfer to a plate. Add another tablespoon of vegetable oil to the wok, and the remaining half of the chicken. Stir-fry until fully cooked. Transfer to the plate.
Step 4: Add the broccoli florets and the remaining ¼ cup of water to the wok. Cover and cook until the broccoli in tender and the water has evaporated (about 3 minutes). Add green onion and garlic and stir-fry for 1 minute. Return the chicken to the wok, pour in the sauce mixture and linguini noodles, and toss to coat. Cook until heated through. Sprinkle with red pepper flakes.

Popcorn Shrimp Sliders Recipe


I am always looking for new sliders recipes for game day so when I came across this recipe by Seapak for popcorn shrimp sliders, I knew I had to give it a try. What is really great about these sliders is that they are so easy to prepare. Using frozen popcorn shrimp really saves times. The popcorn shrimp can either be baked or deep fried, just cook them according to the package directions. This recipe also includes homemade tartar sauce which is a combination of mayonnaise, relish, lemon juice, salt and pepper. What these sliders really reminded me of was a delicious fish sandwich. This is another great recipe idea to prepare for football season. Enjoy.

Ingredients:
1 (20 oz.) package frozen popcorn shrimp
slider buns (or dinner rolls)
butter (for spreading)
romaine lettuce
small tomato slices (or roma tomato slices)
Tartar sauce-
1 cup mayonnaise
2 teaspoons lemon juice
1 tablespoon pickle relish
salt and pepper (to taste)

Cooking Instructions:

Step 1: In a bowl combine mayonnaise with the lemon juice, pickle relish, salt and pepper. Mix well. Cover and refrigerate until needed.
Step 2: Cook popcorn shrimp according to package directions by either baking or deep frying the shrimp until fully cooked. If deep frying, drain on paper towels.
Step 3: Cut the slider buns in half. Lightly spread butter onto the cut side of each slider bun. Heat a large skillet to medium heat. Place slider buns, cut side down into the pan and cook until lightly toasted and golden brown on the bottom. On the bottom half of the each slider bun place a piece of romaine lettuce, 1 tomato slice, a few popcorn shrimp, and tartar sauce. Place the top half of the bun onto the slider.

Pizza Quesadillas Recipe


These pizza quesadillas are one of the easiest and quickest types of quesadillas you will ever make. There is not much involved in this recipe, just a tiny amount of prep work and then frying the quesadilla itself. These quesadillas have your favorite pizza ingredients such as pizza sauce, pepperoni, mozzarella cheese, and sliced black olives. You can add whatever types of pizza ingredients you like such as chopped green pepper and onion. You could also add some cooked Italian sausage if you would prefer. Another good option would be to sprinkle a little Italian seasoning on these quesadillas for even more flavor. This recipe is perfect for an appetizer or for a dinner any night of the week. Ingredients:
½ cup pizza sauce
6 (7 inch) flour tortillas
8 ounces shredded mozzarella cheese
½ cup sliced pepperoni
3 tablespoons sliced pitted black olives
butter

Cooking Instructions:

Step 1:
Lightly butter one side of each flour tortilla. Heat a large skillet to medium high heat. Place the tortilla into the pan butter side down. Spread a thin layer of pizza sauce on half of a tortilla. Sprinkle a layer of cheese over the pizza sauce. Top with pepperoni and black olives. Cook until the cheese has melted and the bottom has browned.
Step 2: Fold the tortillas in half and press down the edges gently.
Step 3: Remove from pan. Repeat until all of the quesadillas are cooked. Slice each quesadilla into three triangles.

Montreal Rubbed Chicken Recipe


If you are short on time preparing a delicious spice rub for grilled or baked chicken is always a good option. A spice rub is much easier to prepare than using a marinade and can be made on the spot with no wait time involved. What’s really great about this recipe is that there is a good chance you may have all of the ingredients on hand. The main ingredient of this recipe is the Montreal steak seasoning. In this recipe, boneless chicken breasts are rubbed with a spice mixture and then either grilled or baked. You can also use bone-in chicken if you would prefer. This Montreal rubbed chicken makes a great dinner for any night of the week. Enjoy.

Ingredients:
4 boneless skinless chicken breasts
1 tablespoon olive oil
2 garlic cloves (minced)
1 tablespoon McCormick’s Montreal brand steak seasoning
1 tablespoon light brown sugar
1 teaspoon  onion powder
½ teaspoon oregano
nonstick cooking spray

Cooking Instructions:

Step 1: Spray the grates of an outdoor grill with cooking spray (or brush lightly with a little olive oil). Preheat the grill to medium high heat.
Step 2: Coat the chicken breasts with the olive oil. In a small bowl combine Montreal steak seasoning, minced garlic, light brown sugar, onion powder, and oregano. Mix well. Rub the mixture evenly over the top and bottom of the chicken breasts.
Step 3: Place onto the grill and cook the chicken breasts, turning once, for about 10 minutes on each side or until fully cooked (the internal temperature has reached 165 degrees).
Note: You can also bake these in the oven at 400 degrees. Line a baking sheet with foil and spray it lightly with cooking spray. Place the chicken breasts onto the baking sheet, place into the oven and bake for 25-30 minutes at 400 degrees or until fully cooked (the internal temperature has reached 165 degrees.)

Chicken Grilled Stuffed Burrito Recipe


One of my favorite things to get from Taco Bell is their chicken grilled stuffed burrito. When I came across this recipe and I saw that it was very similar to the burrito I get at Taco Bell, I knew I had to give it a try. What makes it so similar is that the burrito is cooked on both sides in the frying pan until it is browned. This burrito is loaded with ingredients such as shredded chicken, rice, black beans, and sour cream. You can add additional ingredients as well, some good options maybe be guacamole or pico de gallo. You can adjust the amount of heat in these burritos by the spiciness of the salsa you choose. I personally prefer my burritos not to be too spicy so I just used mild salsa. Ingredients:

1 cup cooked brown rice
1 cup cooked chicken (shredded)
1 can black beans (drained and rinsed)
juice of 1 lime
½ cup salsa
½ tablespoon chili powder
½ teaspoon garlic salt
2 cups shredded Monterey Jack cheese
Sour cream
4 large flour tortillas

Cooking Instructions:

Step 1: In a sauce pan mix cooked brown rice together with chili powder and garlic salt. Add cooked shredded chicken, salsa and black beans. Cook until heated through. Sprinkle cheese over the tortillas, leaving ½ inch border around the edges. Add dollops of sour cream over the cheese.  Arrange some of the chicken and rice mixture down the center of each tortilla. Bring the sides of the tortilla toward the center of the filling. Fold the bottom of the tortillas up over the filling and continue to roll until the burrito closes. Spray the seam side of each burrito lightly with cooking spray.
Step 2: Heat a large skillet or griddle over medium high heat. Place wraps into the skillet seam-side down and cook until golden brown and crisp on the bottom, turn over and cook until golden brown on the other side (about 2-3 minutes per side).

Cheeseburger Sliders Recipe


With the return of football season brings the return of delicious appetizer recipes to serve at your game day party. One of my favorite items to prepare for game day are sliders. There are many different ways to prepare sliders but these cheeseburger sliders are a delicious option. These sliders are basically your classic cheeseburger but smaller. They are topped with ingredients such as dill pickle slices, minced onion, and a delicious burger sauce. The hamburger patties are grilled but you could cook them in the frying pan as well. If you have trouble finding slider buns, you could use dinner rolls. I like to use the dollar rolls that I find in the bakery section at Wal-Mart. Ingredients:
1 ½ lbs ground chuck
slider buns (or dinner rolls)
salt and pepper
sliced cheddar cheese (cut into 4 squares)
dill pickle slices
½ cup onion (minced)
Burger Sauce-
½ cup mayonnaise
¼ cup ketchup
1/8 cup yellow mustard
1 teaspoon dried minced onion
1/8 teaspoon dried minced garlic
1/16 teaspoon white vinegar
hot sauce (to taste)
pepper to taste

Cooking Instructions:

Step 1: In a bowl whisk together the mayonnaise, ketchup, onion, garlic and vinegar. Season with hot sauce and pepper to taste. Cover and chill for at least 1 hour before serving.
Step 2: Form ground chuck into small patties. Season on both sides with salt and pepper. Lightly grease the grates of an outdoor grill, and preheat the grill to medium-high heat. Place patties onto the grill and cook, turning once, until the patties are fully cooked (the internal temperature has reached 160 degrees). During the last few minutes of cooking top each patty with 2 of the sliced cheese squares.

Step 3: Slice the slider buns in half and place cut down onto the grill. Cook until lightly toasted on the bottom. Remove from the grill.
Step 4: Place slider patties onto the bottom half of a bun. Top with minced onion, dill pickle slices, and burger sauce. Place the top half of the bun onto the slider.

Mexican Stuffed Peppers Recipe


These stuffed peppers are packed with Mexican inspired flavors to create a delicious meal for any night of the week. These peppers are stuffed with ingredients such as taco meat and rice. This recipe gets a lot of its flavor from taco seasoning and spices such as garlic salt, chili powder, and black pepper. You can add additional topping or filling ingredients as well to these peppers. Some good choices would be black beans, corn, sour cream, guacamole, and black olives. This recipe calls for steaming the peppers but the entire cooking process could be done in the oven, the baking time will just be longer to get the peppers tender. Ingredients:
1lb ground beef
1 (1 ounce) package taco seasoning mix
¾ cup water
2 teaspoons chili powder
½ cup cooking rice
¼ teaspoon salt
¼ teaspoon garlic salt
1/8 teaspoon ground black pepper
2 (8 ounce) cans tomato sauce (divided)
3 large red bell peppers (or green)
1 (8 ounce) bag shredded Colby-jack cheese

Cooking Instructions:

Step 1: Preheat the oven to 350 degrees. Grease a 9×13 inch baking dish. In a large skillet over medium heat brown the ground beef, breaking it apart into crumbles as it cooked (about 8 minutes). Drain excess fat. Stir in taco seasoning, water, chili powder, cooked rice, salt, garlic salt, black pepper, and 1 can of tomato sauce. Mix until thoroughly combined. Bring to a boil, reduce heat to low and simmer for 20 minutes.
Step 2: While the ground beef is simmering, cut bell peppers in half lengthwise, and remove the steams, membranes, cores, and seeds. Place a steamer inset into a large saucepan, and fill with water to just below the bottom of the steamer. Cover and bring the water to a boil over high heat. Place the peppers into the steamer insert, cover the pan, and steam until just tender (about 3-5 minutes).
Step 3: Place steamy peppers into the prepared baking dish and fill each pepper lightly with the meat filling. Spoon the remaining can of tomato sauce over each pepper. Cover the baking dish with aluminum foil.
Step 4: Place into the oven and bake at 350 degrees until the peppers are tender and the filling is hot (about 25 to 30 minutes). During the last few minutes of cooking, remove the foil and top each pepper with Colby-jack cheese. Bake until the cheese has melted.

Baked Potato Casserole Recipe


This baked potato casserole makes an excellent side dish that will go with all different types of meals. It is perfect to prepare for the holidays or as a side dish to go with dinner any night of the week. I like to serve this casserole with breaded pork chops or chicken. This baked potato casserole is easy to make, it consists of first boiling the potatoes, mashing them and then placing the mashed potatoes into a casserole dish with cheddar cheese and turkey bacon. If you would prefer you can use normal bacon as well. Once the casserole has almost finished baking it is topped off with additional bacon, cheddar cheese, and sliced green onions. This casserole dish can be prepared ahead of time by mashing the potatoes, mixing them with the cheese and bacon, and then placing the mashed potato mixture into the casserole dish. The dish can then be covered and placed into the refrigerator until it is ready to be baked. The baking time is going to be more because the dish will be cold, if you are making it ahead the cooking time will be between 40 to 45 minutes at 350 degrees. After the dish has finished baking it would be topped with the left over cheddar cheese, turkey bacon, and green onions and then placed back into the oven and baked again for an additional 3 minutes. If you are looking for a delicious side dish for dinner or to prepare for the Holidays, give this one a try. Enjoy.

Ingredients:
8 medium potatoes (about 2 ½ to 3 lbs total weight, peeled and cut into 1-inch chunks)
1 cup evaporated 2% milk
½ cup light sour cream
1 teaspoon salt
½ teaspoon ground black pepper
2 cups shredded cheddar cheese (divided)
6 slices turkey bacon (cooked until crispy and crumbled)
sliced green onions

Cooking Instructions:

Step 1: Place the potato chunks into a large saucepan. Fill with enough water to cover the potatoes. Bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until tender. Drain.
Step 2: Pre-heat the oven to 350 degrees. Grease a 2 ½-3 quart casserole dish. Return potatoes to the saucepan. Add evaporated milk, sour cream, salt and pepper. Beat with a hand held mixer until smooth. Stir in 1 ½ cups of cheddar cheese and half of the bacon. Spoon the potato mixture into prepared casserole dish.
Step 3: Place into the oven and bake at 350 degrees for 20 to 25 minutes or until heated through. Top with remaining ½ cup of cheddar cheese, remaining turkey bacon, and green onions. Bake for an additional 3 minutes or until the cheese has melted.

Philly Cheese Steak Sloppy Joes Recipe


These Philly cheese steak sloppy joes take your favorite ingredients of a Philly cheese steak sandwich and combine them with a classic sloppy joe. What I love about this recipe is that it is so easy to prepare and is great if you are looking for a quick meal. The process to preparing these sloppy joes is easy. Ground beef is cooked in the pan with onion and bell peppers. The mixture then gets flavor from steak sauce, beef broth, salt and pepper. A provolone cheese sauce is prepared by combining butter, flour, milk, and provolone. If you don’t want to prepare the cheese sauce, using provolone cheese slices would be great as well. These Philly cheese steak sloppy joes make a great dinner for any night of the week. Enjoy.

Ingredients:
1 tablespoon extra virgin olive oil
1lb ground beef
1 medium onion (chopped)
1 medium green bell pepper (seeded and chopped)
¼ cup steak sauce
1 cup beef broth
salt and ground black pepper (to taste)
4 hamburger buns
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone cheese (shredded)

Cooking Instructions:

Step 1: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook while breaking the ground beef up into chunks with a spatula or spoon until browned. Add the green bell pepper and onion and cook for 3-4 minutes, until the onions start to become tender. Drain an excess liquid. Stir in steak sauce and beef broth, season with salt and pepper. Bring to a boil and cook until the mixture is thickened and bubbly.
Step 2: While the meat is cooking, split the hamburger buns and butter each of the cut sides. Heat a large skillet to medium heat. Place split hamburger buns cut side down into the skillet and cook until lightly browned on the bottom. Remove from the pan and set aside.
Step 3: melt butter in a medium skillet over medium-high heat. Stir in flour and cook for 1 minute. Whisk in milk and cook until the mixture is thickened and bubbly. Remove from heat and stir in the cheese until it is melted and incorporated into the sauce.
Step 4: To assemble sloppy joes- pile the meat mixture onto the top of the bottom half of each bun, top with the provolone cheese sauce, and place the top half of the hamburger bun onto the sandwich.
