		<description>I love enchiladas and your sauce sounds delish,(I have been looking for an easy, out of the pantry recipe for enchilada sauce) but I always make mine with corn tortillas.  I find that flour tortillas get gummy and they don&#039;t absorb the wonderful sauce.  Most recipes call for softening the corn tortillas with a quick fry in oil, but I find the healthier alternative of softening them in the microwave wrapped in a kitchen towel, then filling and rolling works just as well.  I recommend you try making your recipe with corn tortillas, they add a great flavor.
