Doritos Chicken Bites
The use of Doritos chips makes a great breading for chicken bites. The Doritos chips are put into a food processor and blended until they are very fine crumbs. If you do not have a food processor, try and crush the chips as finely as possible. The chicken pieces are first rolled in flour, then dipped in egg and then rolled in the Doritos. These chicken bites are baked in the oven so there is no need for a deep-fryer. I like to serve these Doritos chicken bites with ranch dressing. Enjoy.

  • 4 ounces Doritos chips
  • 8 ounces boneless chicken tenders
  • ½ cup all-purpose flour
  • 1 egg (beaten)

Instructions

  1. Preheat the oven to 400 degrees F. Cut the chicken tenders into bite-sized chunks.
  2. Crush the Doritos in a food processor. Place the crushed Doritos into a large bowl.
  3. Add the flour into a shallow plate or pie dish. In a separate shallow plate or pie dish add the beaten egg. Roll the chicken pieces first in the flour, then dip in the beaten egg, and then roll in the crushed Doritos. Lay on a lightly greased baking sheet. Repeat until all of the chicken pieces are coated.
  4. Place into the oven and bake for 15 minutes or until fully cooked (the internal temperature has reached 165 degrees F.).
