Never been a great fan of cilantro but I keep trying. Definitely will experiment with basil and with mint. I think it a bit chunky for dipping so will try a much finer dice and also puree to make a dipping sauce - I love experimenting with food colours / flavours / textures.
Thanks for the inspiration.

Hmmm, I have no clue whether cayenne pepper is available here. Any ideas for a substitute?

We don't celebrate simple things like Salsa often enough, do we? They're often the bits of a meal we remember most fondly.

Great post.

I usually make a pineapple salsa to serve with Jamaican Jerk Chicken. =)

As for mango salsas: my mother makes a simply kind -- with cilantro, lime juice and red onions -- and actually does just eat it straight like that with a spoon!

When I used to work in a restaurant, we've made mango salsa with mint and basil as the herbal components.

Cheers!

Kevin - Salsas are amazing. I think I'm going to try mango next. Pineapple is amazing... I love the flavor! Let me know how it turns out if you try it.
