I noticed this pancake recipe does not use any leavening ingrediant. I will try the recipe as it is and with some baking soda & baking powder added in a second batch. Looks like a great pancake variant!

I've seen this done before but have yet to do it myself. Sounds great though! Based on my lemon ricotta cookies, I know that adding ricotta will make the pancakes super moist!
