This recipe arrived in my inbox the night before I was hosting a lunch for 30 friends. And then it hit me – I was missing something with seafood on the menu! I keep a couple lbs of big shrimp from Costco in the freezer, and ran out the next morning for the rest of the ingredients that I did not have on hand. So easy, SO good and fresh – it was by far the most popular dish of the day. It has now found a permanent spot in my summer menu planning files!

As usual, this recipe looks awesome! I’ve been afraid to try a true ceviche – I’ll take your suggestion of trying precooked shrimp. Thanks for a great idea!
