I made this last night for my wife and me. We both had it leftover for lunch today. When she got home tonight she said this was the “best” thing I have ever cooked for her. So Bobby take that as a huge compliment. I consider myself a pretty good cook. I did have some fresh corn that I added, but either way it will rock. Thanks.

Shrimp tacos are my FAVE! So light and summery. We have a great place here in Alexandria, VA that does their shrimp taco with red onion echabeche (pickled onions) and an avocado crema sauce and they are *OUTSTANDING.* Adding bacon is an idea that never occured to me…but I like it:)
