3–4 lbs pork spare ribs
1/3 cup yellow mustard
1/2 cup pork rub
1 can of beer
1/2 cup brown sugar
1 cup bbq sauce
Instructions
Heat the smoker to 225°F or 107°C.
Unwrap the ribs and pat dry. Optionally, trim and remove membrane. See instructions above.
Apply a coat of mustard on all sides of the ribs. Apply pork rub over the mustard.
Put ribs in the heated smoker, on the rack with the meatier side facing down for more smokey flavor.
Smoke the ribs uncovered for three hours.
Remove the ribs carefully and set them on top of a large piece of foil, meatier side facing up. The foil must be large enough to fold over and enclose the ribs. You may need multiple pieces.
Sprinkle brown sugar over the ribs. Pour in the beer. Close up the foil tightly and put ribs back in the smoker. Smoke for 2 hours.
Carefully remove ribs from the smoker. Open up the foil. Baste the ribs with bbq sauce and return to the smoker for 1 hour. You can keep them on the foil so they don’t fall apart — leave the foil open so it’s not covering the ribs.
