Description

A rich and buttery butterscotch cake with warm brown sugar flavor and a soft, tender crumb.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup butterscotch chips (optional for an extra dose of butterscotch goodness)

Instructions

  1. Do the prep. Preheat your oven to 180°C (350°F). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Mix the cake batter. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt. In another bowl, lightly beat the eggs. Add the melted butter and vanilla or butterscotch essence, then slowly mix in the milk until fully combined. Slowly fold the wet ingredients into the dry ingredients, stirring until the batter is smooth and slightly creamy.
  3. Pour and prep for baking. Pour the batter into the prepared cake pan and smooth the top with a spatula. If using butterscotch chips, sprinkle them evenly over the top.
  4. Bake. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
    Frost if desired. Once cooled, you can optionally frost evenly with buttercream or cream cheese frosting.
