Heat oil in a large sauté pan over medium-high heat. Add the ground beef and onion and break the beef up into chunks while cooking with a wooden spoon.
Add cumin, coriander, chili powder, salt, and pepper. Cook for 6 minutes. Add minced garlic and cook for 2 minutes or until the beef is fully cooked.
Preheat the oven to 450 degrees F. Warm the corn tortillas in the microwave according to package directions (you can also use a skillet).
Place one at a time onto a cutting board. Place a couple of tablespoons of the meat mixture onto the center of each tortilla with a tablespoon of grated cheese. Roll up tightly and place onto a greased baking sheet. Repeat with remaining tortillas.
Brush each taquito liberally with vegetable oil and sprinkle with salt.
Place into the oven and bake for 10 minutes or until the tops are lightly toasted and cheese has melted.
