- 2 tablespoons vegetable oil
- 1 ¼ lbs lean ground beef
- ½ medium white onion (chopped)
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 garlic clove (minced)
- ¾ cup Monterey jack cheese
- 12 corn tortillas
Instructions
- Heat oil in a large sauté pan over medium-high heat. Add the ground beef and onion and break the beef up into chunks while cooking with a wooden spoon.
- Add cumin, coriander, chili powder, salt, and pepper. Cook for 6 minutes. Add minced garlic and cook for 2 minutes or until the beef is fully cooked.
- Preheat the oven to 450 degrees F. Warm the corn tortillas in the microwave according to package directions (you can also use a skillet).
- Place one at a time onto a cutting board. Place a couple of tablespoons of the meat mixture onto the center of each tortilla with a tablespoon of grated cheese. Roll up tightly and place onto a greased baking sheet. Repeat with remaining tortillas.
- Brush each taquito liberally with vegetable oil and sprinkle with salt.
- Place into the oven and bake for 10 minutes or until the tops are lightly toasted and cheese has melted.
