  2. Put the sweet potatoes into the oiled pan, allowing space between the slices. Cover the pan and let the potatoes cook for about 3-4 minutes. Open the pan, flip the pieces, cover, and let it cook for another 3 minutes. They should be done when the cooked sides are fork-tender and golden brown.
