Salmon With lemon, Plum Tomatoes and Herbs

Ingredients

  • 2 salmon fillets
  • 100-gram parsley
  • 1 lemon
  • 1 spring onion
  • 10 cherry tomatoes
  • 1 tbsp olive oil
  • Salt
  • Black pepper

Instructions

  • finely chop the spring onion and parsley
  • cut the cherry tomato in small sizes
  • mix chopped spring onion, parsley and tomatoes in a small baking tray
  • squeeze the whole lemon
  • add a little bit of lemon zest
  • add olive oil
  • add salt and pepper to taste
  • mix well
  • cover the mixture on the salmon fillets
  • cover the baking tray with the aluminium foil
  • place in the oven at 180-degree centigrade for 25 minutes

Notes

  • Serve with steamed broccoli and backed potatoes.
