Slow Cooker Pork Ragu Recipe

  • 1 tablespoon olive oil
  • 2lbs pork shoulder
  • 1 large onion (finely chopped)
  • 1 carrot (finely chopped)
  • 4 garlic cloves (minced)
  • 1 cup red wine
  • 2 (28 ounce) cans crushed tomatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper (to taste)
  • 1lb pasta
  • Grated parmesan cheese (for serving)

Instructions

  1. Add olive oil to the bottom of the slow cooker. Add pork shoulder, onion, carrot, garlic, wine, crushed tomatoes, bay leaves, thyme, and oregano. Season with salt and pepper to taste. Cover and cook on low for 8 hours. Shred the pork using two forks. Discard the bay leaves. Return the pork to the sauce.
  2. Cook pasta according to package directions. Drain. Serve the sauce on top of the noodles and top with grated parmesan cheese.
