Add olive oil to the bottom of the slow cooker. Add pork shoulder, onion, carrot, garlic, wine, crushed tomatoes, bay leaves, thyme, and oregano. Season with salt and pepper to taste. Cover and cook on low for 8 hours. Shred the pork using two forks. Discard the bay leaves. Return the pork to the sauce.
Cook pasta according to package directions. Drain. Serve the sauce on top of the noodles and top with grated parmesan cheese.
