You can make these sesame noodles with the chicken or without, to suit the occasion. If this dish is your entire meal, the chicken works beautifully as your protein. If you need a side dish or a vegetarian option, skip the chicken and you still have a tasty, tangy plate of noodles.

– 16 oz. spaghetti or angel hair pasta – 6 garlic cloves, minced – 6 tablespoons sugar – 6 tablespoons + 4 teaspoons of safflower or vegetable oil, divided – 6 tablespoons rice vinegar – 6 tablespoons soy sauce – 2 tablespoons sesame oil – 2 teaspoons chili sauce – 6 green onions, sliced – 1 teaspoon toasted sesame seeds – 2 boneless, skinless chicken breasts

1. Pat chicken breasts dry and season with salt and pepper. Heat a nonstick skillet and add 2 teaspoons of oil. Add the chicken breasts and cook for 6 to 7 minutes per side. Remove from the pan, rest for 3 minutes, then slice.
2. Heat a small skillet over medium heat and add 1 teaspoon sesame seeds. Cook, stirring, until seeds brown and become fragrant.
3. Cook pasta noodles according to package directions. When pasta has finished cooking, toss noodles with a teaspoon of oil, drain and set aside in a large serving dish.
4. While pasta noodles are cooking, place a saucepan over medium-high heat and add safflower oil, garlic, vinegar, sugar, soy sauce, sesame oil, and chili sauce.
5. Bring to a boil and stir until sugar dissolves. Remove from heat. Pour the sauce over pasta and toss to coat. Garnish with green onions and sesame seeds.
