Cake
- 1 1/2 cups unsalted butter, softened
- 3 cups granulated sugar
- 5 large eggs
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 3/4 cup 7-Up soda
- 1 teaspoon vanilla extract

- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 to 2 tablespoons 7-Up soda
Instructions
- Preheat the oven. Heat the oven to 325°F (165°C). Grease and flour a Bundt pan thoroughly so the cake releases easily.
- Mix the wet ingredients. In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3 to 4 minutes. Beat in the eggs one at a time, mixing well after each addition.
- Combine the dry ingredients. In a separate bowl, whisk together the flour and salt.
- Mix the batter. Gradually add the flour mixture to the butter mixture, alternating with the 7-Up soda. Mix until just combined. Stir in the lemon juice, lemon zest, and vanilla extract until evenly incorporated.
- Bake. Transfer the batter to the prepared Bundt pan and smooth the top. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
- Glaze. Allow the cake to cool in the pan for about 15 minutes, then turn it out onto a wire rack to cool completely. In a small bowl, whisk together powdered sugar, lemon juice, and enough 7-Up to create a pourable glaze. Drizzle the glaze over the cooled cake and allow it to set before slicing.
