Salmon With lemon, Plum Tomatoes and Herbs
Ingredients

- 2 salmon fillets
- 100-gram parsley
- 1 lemon
- 1 spring onion
- 10 cherry tomatoes
- 1 tbsp olive oil
- Salt
- Black pepper
Instructions
- finely chop the spring onion and parsley
- cut the cherry tomato in small sizes
- mix chopped spring onion, parsley and tomatoes in a small baking tray
- squeeze the whole lemon
- add a little bit of lemon zest
- add olive oil
- add salt and pepper to taste
- mix well
- cover the mixture on the salmon fillets
- cover the baking tray with the aluminium foil
- place in the oven at 180-degree centigrade for 25 minutes
Notes
- Serve with steamed broccoli and backed potatoes.
