Beef fried rice is a great side dish to go with any Chinese dinner. This recipe consists of marinated strips of beef being stir-fried in the pan and then mixed together with stir-fried rice and various ingredients. It is important to use left-over cooked rice for this recipe. The rice should be at least one day old. You can season with the dish to your liking with additional salt and pepper and/or soy sauce. I like to even add in a little oyster sauce for adding more flavor. Instead of using frozen peas and fresh carrots separately, you can just buy a bag of frozen peas and carrots and let ¾ of the cup the peas and carrots thaw and use that instead. Beef Fried Rice Recipe
Ingredients
- 8 ounces flank steak (sliced into thin strips)
- 3 teaspoons soy sauce
- ½ teaspoon sugar
- ¼ teaspoon sesame oil
- 1 pinch of white pepper
- ¾ teaspoon cornstarch Other-
- 1 large egg
- ¼ teaspoon salt
- 3 tablespoons peanut oil
- 1 teaspoon minced garlic
- ½ onion (chopped)
- 4 cups cold leftover cooked rice
- ½ cup frozen peas (thawed)
- ¼ cup shredded carrot
- 1-2 green onions (finely chopped)
Instructions
- Add the sliced beef to a medium bowl. Add soy sauce, sugar, sesame oil, white pepper and cornstarch to the bowl. Mix the marinade ingredients well with the steak. Allow the steak to marinade for at least 10 minutes.
- In a small bowl lightly beat the egg together with the salt. Heat 1 tablespoon of oil in the wok over medium-high heat. When the oil is hot, add garlic and stir-fry for a few seconds. Then add the onion and stir-fry for 1 to 2 minutes, until it starts to brown and soften. Add the steak and stir-fry until it changes color. Add 2 more tablespoons of oil to the wok. Reduce the heat to medium. Add the rice, stirring and turning it over with a spatula to heat through and break up any clumps of rice. Add in the peas and carrots, stirring to combine.
- Make a room in one corner of the work and pour in the beaten egg. Scramble the egg and then stir it to combine with the rice. Stir in the green onion. Do a taste test to see if it is seasoning to your liking. You can add more salt and pepper and/or soy sauce if desired. Serve hot.
