Baked Chicken Thighs Recipe

This is a simple, easy recipe that produces incredibly moist and flavorful chicken. It takes only 5 main ingredients plus 5 minutes of prep.

  • 4 boneless skinless chicken thighs
  • 1/2 cup Dijon mustard
  • 1/4 cup maple syrup
  • 1 tablespoon rice wine vinegar
  • Salt and pepper (to taste)
  • Fresh rosemary, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 450°F or 232°C. In a medium bowl, whisk together Dijon mustard, maple syrup, and rice wine vinegar. [mv_img id="48723"]
  2. Line an 11×9 inch baking dish with aluminum foil. Lightly coat the foil with oil or nonstick spray. Place the boneless chicken thighs in a single layer in the baking dish. Season on both sides with salt and pepper.[mv_img id="48725"]
  3. Pour the maple and mustard mixture over the chicken thighs in the baking dish. Turn the thighs over so that they are coated on both sides.[mv_img id="48727"]
  4. Place the dish in the oven and bake for 40 minutes or until the internal temperature reaches 165°F or 74°C. Top with fresh chopped rosemary and serve.

Notes

You can omit the rosemary or use dried rosemary instead of fresh. To use dried, add it to the maple/mustard mixture before cooking the chicken.
