1 (30 ounces) bag tater tots or potato rounds
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
1 teaspoon paprika
1/2 teaspoon cumin
1 teaspoon garlic powder
1/2lb chorizo sausage (cooked)
4 eggs (scrambled)
1cup Mexican cheese blend
1/3cup sour cream
1 roma tomato (chopped)
1 jalapeno pepper (sliced)
1/4cup cilantro (chopped)
Instructions
In a small bowl combine salt, pepper cayenne, paprika, cumin, and garlic powder. Stir until well combined.
Toss the frozen tater tots in the spice mixture. Place onto a baking sheet and cook according to package directions.
Remove from the oven and top with cooked chorizo, scrambled eggs, and cheese. Return to the oven and bake for 3 additional minutes or until the cheese has melted.
Top with jalapenos, sour cream, tomato, and cilantro.
