- Preheat the oven to 350 degrees Fahrenheit.
- Go ahead and place the chicken breasts on a cutting board with the rounded side facing up.
- Then half the chicken breasts. One hand should be placed on top of the chicken breast. Carefully cut the chicken breast in half lengthwise with a sharp knife. Repeat.

- You can now place the chicken on the baking pan using tongs.
- Spread the remaining olive oil over the chicken with the pastry brush. Season generously with salt and pepper.
- Bake. Bake for 15-20 minutes, or until the internal temperature of the chicken breast reaches 165°F.
