Description

A refreshing homemade pink lemonade made with fresh lemon juice, strawberries, and blueberries for a naturally fruity twist on the classic summer drink.


Ingredients

  • 1 2/3 cups fresh lemon juice (from 6-7 lemons)
  • 8 cups of water
  • 1 2/3 cup sugar (or less, depending on how you like it)
  • 3 strawberries (ends removed and cut in half)
  • 2 rounded tablespoons blueberries
   

Instructions

  1. Make the syrup. In a small saucepan, combine the sugar and 1 cup of water. Bring to a boil, stirring until the sugar fully dissolves. Let the syrup cool to room temperature, then refrigerate until chilled.
  2. Prepare the fruit and lemon juice. Juice the lemons, removing the seeds but keeping the pulp. In a blender, combine the blueberries, strawberries, and 1 cup of water. Blend until smooth.
  3. Strain the berry mixture. Pour the lemon juice into a large pitcher. Place a fine mesh strainer over the pitcher and pour the blended berry mixture through it. Use the back of a spoon to press as much liquid through as possible while leaving most of the pulp behind.
  4. Finish the lemonade. Remove the strainer and stir in the chilled syrup along with the remaining 6 cups of water. Mix well and refrigerate until fully chilled before serving.
