Preheat the oven to 425 degrees F. Line the bottom and up the sides of a 10-inch cast iron skillet with the tater tot crowns. Place into the oven and bake for 10 minutes. Remove from the oven and press the tater tots with a spatula to flatten. Sprinkle with 1 cup of cheese.
In a medium bowl whisk together the eggs, salt, and pepper. Heat a large non-stick skillet to medium heat. Add the beaten eggs and cook stirring often for about 2 minutes or just softly set. Spoon the eggs over the cheese in the skillet. Top with remaining 1 cup of cheese and bacon.
Return to the oven and bake for 10 minutes or until heated through.
