Updated on July 30th, 2025

If you’re looking for a breakfast sandwich that really hits the spot, this sausage and egg grilled cheese is a great place to start. It’s hearty, cheesy, and loaded with flavor from golden scrambled eggs, savory breakfast sausage, and melty American cheese. The crispy, buttery bread ties it all together into something that feels like diner comfort food you can make at home. This one’s perfect for mornings when you want something a little extra.

Why this recipe works

  • Simple ingredients, big flavor: Just a handful of basic ingredients come together to create a rich, satisfying breakfast.
  • Crispy outside, melty inside: The buttered bread turns golden in the pan while the cheese melts between layers of eggs and sausage.
  • Make-ahead friendly: You can cook the sausage and eggs in advance, then assemble and grill when ready to eat.
  • Customizable: Swap the American cheese for cheddar, pepper jack, or whatever you prefer. It’s easy to make this your own.

Serving suggestions

  • Serve with hash browns or roasted potatoes for a filling weekend brunch.
  • Add a side of fruit or a green smoothie if you want to lighten things up a bit.
  • Cut the sandwiches in halves or quarters for a brunch board or casual gathering.
  • Wrap in foil to take on-the-go if you’re making these for a busy weekday breakfast or road trip snack.

Sausage and Egg Grilled Cheese Recipe

If you’re looking for a breakfast sandwich that really hits the spot, this sausage and egg grilled cheese is a great place to start.

  • Author: Bobby
  • Total Time: 30 minutes
  • Yield: 4 Servings 1x

Ingredients

Units Scale
  • 1/2lb breakfast sausage
  • 8 slices white bread
  • 8 slices American cheese
  • 6 eggs
  • 1/4 cup milk
  • butter

Instructions

  1. Heat a medium skillet to medium-high heat. Add the sausage and break up while cooking into chunks with a spatula until fully cooked (the internal temperature has reached 160 Degrees F.).
  2. In a medium bowl mix together eggs and milk. Season with salt and pepper if desired.
  3. Melt about 1 tablespoon of butter in a non-stick skillet over medium heat. Pour in the egg mixture. As the eggs begin to set, gently pull them across the pan with a spatula, forming large curds.
  4. Continue cooking while pulling and folding the eggs until thickened no and visible liquid egg remains. Mix the cooked sausage in with the eggs.
  5. Butter one side of each slice of bread. Place a piece of bread butter-side down onto the top of a griddle or non-stick skillet over medium-low heat. Add a slice of cheese, some of the egg mixtures, followed by another slice of cheese. Put the second bread slice on top, butter-side facing up.
  6. Fry for a couple of minutes, turning once, until golden brown on both sides and the cheese has melted. Repeat with remaining sandwiches.
