Taco Bell Power Menu Burrito Recipe

  • by

Updated on September 3rd, 2025

This Taco Bell Power Menu Burrito recipe is one of those fast food items that people love because it’s fresh, flavorful, and filling, and now you can recreate it at home. This version brings together citrus-marinated grilled chicken, crisp romaine lettuce, guacamole, sour cream, Pico de Gallo, and cheese, all wrapped up in a soft tortilla. What makes this recipe stand out is the avocado ranch dressing paired with juicy grilled chicken that has been marinated in tomatillo, garlic, chili pepper, and herbs. It’s hearty enough for dinner but easy enough to prepare for lunch, and it tastes even better when everything is made fresh in your own kitchen.

Why this recipe works

  • Flavorful citrus chicken: The marinade made with tomatillo, cilantro, garlic, and lemon juice gives the chicken a bright, tangy, and savory flavor that sets the tone for the whole burrito.
  • Creamy avocado ranch: The homemade avocado ranch dressing adds a smooth, tangy layer that balances the spice from the marinade and the freshness of the vegetables.
  • Fresh toppings: Crisp lettuce, Pico de Gallo, and guacamole bring a refreshing crunch and contrast to the warm chicken and cheese.
  • Homemade flexibility: You can control the portions, spice, and richness, making it lighter or heartier depending on what you prefer.
  • Better than takeout: With freshly grilled chicken and homemade dressing, this burrito feels more wholesome and satisfying than the fast food version.

Serving suggestions

  • Complete the meal: Pair the burrito with tortilla chips and salsa or queso for a restaurant-style plate at home.
  • Add some sides: A light Mexican corn salad or black bean salad works well to balance out the richness of the burrito.
  • Make it a bowl: Skip the tortilla and serve the ingredients over rice for a Power Bowl variation that’s just as tasty.
  • Spice it up: Add jalapeños, hot salsa, or extra chili powder in the marinade if you prefer more heat.
  • Prep ahead: Grill the chicken and make the avocado ranch dressing in advance so you can assemble quick burritos throughout the week.

  • 1/2 fresh Anaheim Green Chile, seeds and veins removed
  • 3 cloves fresh garlic
  • 2 tsp olive oil
  • 1 1/2 tablespoon fresh lemon juice
  • 1/2 cup chicken broth
  • 1 teaspoon salt
  • 2 teaspoon sugar
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 2 Tablespoon fresh chopped cilantro
  • 1 Tablespoon fresh chopped parsley
  • 4 large boneless, skinless chicken breasts

Avocado-Ranch Dressing-

  • 1/8 cup ranch dressing
  • 1/8 cup buttermilk
  • 1/2 avocado
  • 2 pinches salt
  • 2 tablespoons sour cream

Other-

  • 1 cup prepared guacamole
  • 1 cup prepared Pico de Gallo
  • Shredded Colby-jack cheese
  • 2 cups chopped romaine lettuce
  • Sour cream
  • 8 large flour tortillas

Instructions

  1. In a blender combine all of the ingredients for the marinade. Process until smooth and pour into a large zip lock bag.
  2. Add the chicken breasts and seal the bag. Place into the refrigerator and allow the chicken to marinate for at least 8 hours.
  3. In a blender combine avocado, ranch dressing, buttermilk, salt, and sour cream. Blend until smooth. Cover and refrigerate until needed.
  4. Lightly grease the grates of an outdoor grill. Heat the grill to medium-high. Remove the chicken breasts from the marinade and place onto the grill. Cook, turning at least once, for about 5-6 minutes per side or until fully cooked (the internal temperature has reached 165 degrees F.). Remove the chicken from the grill and slice it into thin strips.
  5. Spread a little of the avocado ranch dressing onto the center of a tortilla. Add some romaine lettuce, some of the grilled chicken pieces, add on some cheese and a little guacamole, sour cream and pico. Roll up into a burrito.
