Butterscotch Cookies
I havenā€™t baked in a while and I had the craving for some cookies, butterscotch cookies that is. This is a simple and very easy recipe that uses butterscotch chips, butter, and sugar to give the cookies great flavor. They were so good that as I am writing this article there is none left! This recipe uses crispy rice cereal to make the cookies perfectly crispy with a little crunch but yet still slightly chewy making the texture great. Be sure not to overbake them because they will get kind of hard if you do. There are so many great ways to make cookies and if you havenā€™t tried butterscotch chip yet give this recipe a try! Enjoy.

Ingredients

  • Ā½ cup butter (softened)
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • Ā¼ teaspoon salt
  • Ā½ teaspoon baking soda
  • 2 cups crisp rice cereal
  • 1 cup butterscotch chipsĀ 

Instructions

  1. In a large bowl cream butter and sugar until the mixture is fluffy. Add in vanilla and egg and mix well. Add salt, flour, and baking soda. Mix well. Stir in the crisp rice cereal and butterscotch chips. Step 2: Drop dough by the rounded teaspoon onto a greased cookie sheet.
  2. Bake in the oven at 350 degrees for 12-15 minutes. Remove from oven and let cool.

  1. i adore butterscotch chips. i realize that they don’t really taste anything like true butterscotch, but i love ’em anyway. in fact, oatmeal scotchies are my favorite cookie. i’ll have to give these a try–there might be a dethroning. šŸ™‚

  9. Made 2 batches of these cookies this morning. Delicious. I though it was too sweet so I cut the sugar down to 1/2 C instead of 1 C.

  10. I made these last night. I swapped out half the butter for half as much yogurt and the texture was still perfect! I think I will cut back significantly on the sugar next time as the chips are already so sweet. Also thinking about trying cinnamon chips. But this is a terrific recipe, thank you! The Rice Krispies are a brilliant idea and make the texture so perfect, they add a lovely lightness and crispness to them. My kids love them! I blogged them as well.
