I havenāt baked in a while and I had the craving for some cookies, butterscotch cookies that is. This is a simple and very easy recipe that uses butterscotch chips, butter, and sugar to give the cookies great flavor. They were so good that as I am writing this article there is none left! This recipe uses crispy rice cereal to make the cookies perfectly crispy with a little crunch but yet still slightly chewy making the texture great. Be sure not to overbake them because they will get kind of hard if you do. There are so many great ways to make cookies and if you havenāt tried butterscotch chip yet give this recipe a try! Enjoy.

Yummy, they sound delicious.
i adore butterscotch chips. i realize that they don’t really taste anything like true butterscotch, but i love ’em anyway. in fact, oatmeal scotchies are my favorite cookie. i’ll have to give these a try–there might be a dethroning. š
Those cookies look so good! I even have a bag of butterscotch chips just waiting to be used.

I love anything with butterscotch. It’s too bad that more baked goods are not utilizing that flavor. But those cookies look delicious.

these are so good!!!!!! great recipe
made these cookies today and they were very tasty… the rice krispies give it a nice crunch. I cant wait to try other recipes on this site!!!
made these last week, Very Yummy Cookies, I added half a cup of sugar instead of the full cup, im making them again tonite š kids love them!!!
Made 2 batches of these cookies this morning. Delicious. I though it was too sweet so I cut the sugar down to 1/2 C instead of 1 C.
I made these last night. I swapped out half the butter for half as much yogurt and the texture was still perfect! I think I will cut back significantly on the sugar next time as the chips are already so sweet. Also thinking about trying cinnamon chips. But this is a terrific recipe, thank you! The Rice Krispies are a brilliant idea and make the texture so perfect, they add a lovely lightness and crispness to them. My kids love them! I blogged them as well.
