- 1 cup Le Puy lentils, uncooked

- Pick the lentils and discard any small debris you find- stones, husks, or shriveled seeds. Then, rinse thoroughly in a fine-mesh sieve. Make sure to pick it clean before you cook.
- Bring a pot of water to a boil, and transfer the washed lentils into it. Reduce the heat and add the spices and seasonings. Simmer for about 20 minutes or less, depending on your preference. Stir occasionally.
