  • Four ears of corn
  • One tablespoon of olive oil
  • Kosher salt and fresh ground black pepper
  • Two tablespoons of butter (or coconut oil or vegan butter for vegans)
  • Chopped cilantro, parsley, or chives, for garnishing (optional)

Instructions

  1. Heat the grill to medium-high (375 to 450 degrees Fahrenheit).
  2. Remove the corn from the cob. Wrap a sheet of aluminum foil around each corn cob. Season it with salt and pepper after rubbing it with olive oil. Add a few thin pats of butter (½ tablespoon per packet) on top.
  3. Wrap and seal the foil around the corn, securing the edges at the top but not too tightly. Make a few small holes in each packet using a needle.
  4. Place the packets on the grill grates and cook for 20 to 25 minutes, flipping once or twice until the corn is bright yellow and cooked through.
