- 1 1/2 lbs ground beef

- 4 slices white cheddar cheese
- 4 pieces of leaf lettuce
- 4 sesame seed buns
- 4 plum tomatoes, seeded and diced
- 1 small white onion, finely chopped
- 2-3 jalapeño peppers, seeded and chopped
- 1/2 cup fresh cilantro, chopped
- 1 tablespoon fresh lime juice
- salt, to taste
- 3 ripe avocados, peeled and pitted
- The juice of 1 lime
- 1 teaspoon salt
- 1/2 cup onion, diced
- 3 tablespoons fresh cilantro, chopped
- 1 teaspoon fresh garlic, minced
- 1 pinch cayenne pepper
Instructions
- Make the pico de gallo. In a medium bowl, combine the tomatoes, onion, jalapeño peppers, and cilantro. Add the lime juice and salt, then stir to combine. Cover and refrigerate for 1 hour to let the flavors meld.
- Prepare the guacamole. In a separate bowl, mash the avocados until mostly smooth. Stir in the lime juice and salt, then mix in the onion, cilantro, tomatoes, garlic, and cayenne pepper. Cover and refrigerate for 1 hour.
- Prepare the burger patties. Divide the ground beef into 4 equal patties and season both sides with salt and pepper. Heat a large skillet or griddle over medium-high heat.
- Cook the burgers. Add the patties to the hot skillet and cook, turning once, until they reach an internal temperature of 160°F. During the last minute of cooking, top each patty with a slice of white cheddar cheese and cook until the cheese has melted.
- Assemble the burgers. Place each cheeseburger on the bottom half of a hamburger bun. Top with a lettuce leaf, a generous spoonful of guacamole, and pico de gallo. Add the top bun and serve immediately.
