The chicken is marinated for only about 10 minutes in lime juice, seasoned with salt and pepper and then grilled. If you don’t have a grill you can also cook this on the stove top. Enjoy.

- 4 boneless skinless chicken breasts (pounded to 1/2 inch thickness)
- Juice of 2 limes
- Salt and pepper
- 1/2 cup sundried tomatoes
- 1/2 cup black beans
- 2 tablespoons cilantro (chopped)
- 1 cup shredded cheddar cheese
Instructions
- Prepare the marinade
Place the chicken breasts in a shallow dish. Pour the lime juice over the chicken and season both sides with salt and pepper. Let marinate for about 10 minutes. - Preheat the grill or pan
Preheat a grill to medium heat. If cooking on the stovetop, heat a grill pan or large skillet over medium heat and lightly grease it. - Cook the chicken
Remove the chicken from the marinade and place it on the grill or in the pan. Cook for 5 to 6 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). - Add the toppings
While the chicken is still hot, top each breast with sundried tomatoes and black beans. Sprinkle the shredded cheddar cheese evenly over the top. - Melt the cheese
Close the grill lid for 1 to 2 minutes, or cover the pan loosely, just until the cheese melts. - Finish and serve
Remove the chicken from heat and sprinkle with chopped cilantro. Let rest for a few minutes before serving. Serve warm on its own or with rice, salad, or grilled vegetables.
