Coronation Chicken Salad Sandwich

Coronation chicken invest by two British food lovers at the prestigious French cookery school in London called Le Cordon Bleu – Blue Ribbon in English.

This flavorful chicken recipe is excellent for sandwiches to go on picnics but also goes well with baked potatoes.

Ingredients

  • Roasted chicken [shredded chicken breast is preferred]
  • Curry powder
  • 3 tbsp Mayo
  • 1/2 tsp Cinnamon
  • Ground Black Pepper
  • 1 tbsp Mango chutney
  • sultanas or sugar-coated raisings

Instructions

  1. Pre-heat the oven to 350 degrees and roast chicken breast for 20 minutes. Make it shredded when it is done.
  2. Mix everything except chicken – Curry powder, may, cinnamon, pepper, mango chutney and raisings
  3. Add the roasted and shredded chicken
  4. Serve in the sandwich. I prefer sun-dried tomato bread but it goes well with any bread.
