Mexican Taco Pork Bowl

This Mexican Taco Pork Bowl is an easy-to-cook, carb-free option for any night of the week. The combination of taco seasoning, salsa, yogurt, and cheese give a delightful Mexican flavor to the dish. Healthy alternatives are available by switching to lean mince and using low-fat yogurt.

Additional toppings, such as guacamole and sour cream, can be included if you wish. If you are a carb lover, simply put a flour tortilla to warm in the oven and enjoy as a wrap. Delicioso!

Mexican Taco Pork Bowl

Ingredients

  • ½ cup minced pork (use lean minced pork for a healthier option)
  • 1 tbsp cup taco seasoning
  • 3 tbsp water
  • 2 tbsp salsa
  • 2 tbsp natural yogurt (use 0% fat yogurt for a fat-free alternative)
  • 1/3 iceberg lettuce, chopped
  • Grated cheese

Instructions

  1. Heat a small amount of oil in a frying pan.
  2. Add the minced pork and lower the temperature slightly. Brown the minced pork.
  3. Drain any excess fat.
  4. Mix the taco seasoning and water in a separate container and pour the mixture onto the browned minced pork.
  5. Bring to the boil and then reduce to a simmer.
  6. Leave to simmer for 10-15 minutes.
  7. Meanwhile, chop, wash and drain the lettuce and grate the cheese.
  8. Once the meat is fully heated throughout, take off the heat.
  9. Layer a bowl with chopped lettuce, the taco pork mixture, salsa, and yogurt and grate the required amount of cheese on top.
