Beef Sliders with Chipotle Mayo

Could there be a more delicious slider for game day than these hamburger sliders with chipotle mayo? We think not.

These sliders are topped with cheddar cheese, red onions, pickles, and an amazing chipotle mayo. You can either cook the burgers on the stovetop or grill them. I cooked them using a griddle. The chipotle mayo adds tons of flavors and makes this recipe different and better than plain-old burger sliders.

You can also add other burger toppings as well such as lettuce and tomato. Enjoy.

Ingredients

Chipotle Mayo

  • 1/2 cup mayonnaise
  • 1 chipotle in adobo
  • 1/2 tablespoons adobo sauce
  • Juice of 1/4 lime
  • Salt and pepper

Sliders

  • 1lb ground chuck
  • Salt and pepper
  • Cheddar cheese slices
  • Slider buns
  • Red onion slices
  • Dill pickle slices

Instructions

  1. Make the chipotle mayo. Add all of the ingredients for the mayonnaise in a food processor and puree. Season to taste with salt and pepper.
  2. Grill the patties. Preheat the grill to medium-high heat. Form the meat into 6 small patties and season on both sides with salt and pepper. Place the burgers onto the grill and cook for about 5 minutes and then flip and cook for another 4 minutes. When the sliders are almost done, top each with cheddar cheese and close the grill for 2 minutes so the cheese melts.
  3. Toast the buns. While the burgers cook, split the slider buns and place cut-side-down onto the outer edges of the grill, away from direct flame. Toast lightly.
  4. Assemble the sliders. Place the hamburgers onto the toasted buns and top with chipotle mayo, onion slices, and pickles.
