Ingredients

  • 1 (30-ounce) bag tater tot crowns
  • 1 tablespoon vegetable oil
  • 2 cups shredded Cheddar cheese (divided)
  • 6 eggs (lightly beaten)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 cup cooked (crumbled bacon)

Instructions

  1. Preheat the oven to 425 degrees F. Line the bottom and up the sides of a 10-inch cast iron skillet with the tater tot crowns. Place into the oven and bake for 10 minutes. Remove from the oven and press the tater tots with a spatula to flatten. Sprinkle with 1 cup of cheese.
