How to cook chicken breast in an air fryer

Air frying is one of the most reliable ways to get tender, juicy chicken breast without much effort. Cook it right and your air-fried chicken breast will have a light, golden finish on the outside and a moist interior. Truly, once you try it, you may wonder why you’ve endured boneless chicken breast that’s rubbery or dry for so long.

Here’s a guide to the timing, temperature, and technique required to make delicious, tender chicken breasts in your air fryer.

There are only four main rules to remember: brine, pound, give them space, and watch that internal temperature. Optionally, you can swap in a marinade for the brine if you want extra flavor.

1. Brine (or marinade)

Brining helps season the chicken all the way through and keeps it juicy. You can use a dry or wet brine.

  • Dry brine: Sprinkle salt over the chicken and let it sit for 30 minutes up to a few hours. This is the easier and less messy option. If you dry brine the chicken, you can follow with seasoning or a light marinade for added flavor.
  • Wet brine: Soak the chicken breast in saltwater for 30 minutes. You can make saltwater with 1 tablespoon salt per 1 cup of water. Take care not to splash the water everywhere after it has touched your chicken.

Marinating your chicken instead of brining it can add flavor and moisture, depending on the marinade ingredients. Opt for marinades with oil and salt and avoid those with lemon or lots of vinegar.

2. Pound

Chicken breasts are rarely uniform in thickness, unless you buy them already trimmed into tenders. All that variation invites uneven cooking. By the time the thick middle is safe to eat, the outer edges are tough and dry.

Remedy that problem by pounding each breast between two sheets of plastic wrap. I like having a mallet on hand for this purpose, but you can also pound with a rolling pin or a can of beans. Focus on the thick parts of the meat and keep pounding until it is even.

Alternatively, you can buy trimmed breasts or chicken tenders that are already even and consistently sized. Chicken tenders are smaller in size and have different timing recommendations. See them here.

3. Give them space

The air fryer works by circulating air. When you stack or overlap the food, the air doesn’t reach all the edges. This is another situation that invites uneven cooking.

Arrange your chicken breasts so the air can reach all their edges. That means they’re not touching one another. You may need to cook them in batches, but it’s worth it.

4. Watch the internal temp

Chicken breasts dry out quickly once they go past the right temperature. Use a probe or instant-read thermometer to ensure you’re not overcooking. Chicken is safe to eat at 165°F (74°C), but you can remove it from the air fryer at 160°F (71°C) as long as you let it rest for a few minutes. The temperature rises as it rests.

Air fryer chicken breast cooking time

Chicken breasts air fry nicely at 380°F (193°C). Timing is usually 12 to 15, but it can be longer or shorter depending on size:

  • Small (5-7 oz): 10-12 minutes
  • Medium (8-10 oz): 12-15 minutes
  • Large (11+ oz): 15-18 minutes

Flip them halfway through cooking for even browning.

Always check for doneness with a thermometer rather than relying only on time.

Air-frying frozen chicken breasts

You can cook chicken breasts straight from frozen, but the texture won’t be quite as juicy since you can’t brine or pound them.

To air-fry frozen chicken breasts:

  • Preheat air fryer to 360°F (180°C)
  • Lightly coat the meat with oil and season
  • Cook for 18-20 minutes, flipping after 10 minutes.

Make sure the internal temperature reaches 160°F before you finish cooking. Let it rest until the temperature rises to 165°F.

Storage and reheating

You can store air-fried chicken breast in the refrigerator for up to four days in an airtight container. For longer storage, freeze them for up to three months, again using an airtight container or freezer bag to prevent freezer burn.

When you’re ready to reheat, warm the chicken gently in a 350°F (177°C) oven or in the air fryer just until heated through.
