This recipe turns a beef roast into tender, delicious slow cooker Italian beef. Use it for sandwiches or sliders — topped with gooey provolone or mozzarella cheese. You can also enjoy Italian beef alongside rice or pasta.
The dish is easy to prepare — simply add the ingredients to your slow cooker, turn it on, and wait. Once the beef is tender, shred it and return it to the crock pot to absorb the juices. You can also use the leftover juices for dipping as an au jus.

- 3–4 pounds beef chuck roast
- 1 large red onion
- 5 garlic cloves
- 15–20 pepperocinis
- 4 tablespoons butter
- 1/2 cup red wine
- 1/4 cup Worcestershire sauce
- 1/4 cup of soy sauce
- 3 tablespoons brown sugar
- 1 tablespoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
Instructions
- Do the prep. Slice the red onion, then peel and mince the garlic. Place the beef roast into the bottom of the slow cooker. Place all of the other ingredients on top. Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours.
- Shred and serve. Once the beef is tender and falling apart, remove it from the slow cooker and shred with two forks. Return the shredded beef to the slow cooker to absorb the juices before serving. You can also spoon off some broth to use as au jus.
