Description

This Roadhouse Burger is piled high with melted Swiss cheese, crispy bacon, caramelized onions, a crunchy onion ring, and creamy homemade garlic mayonnaise for an over-the-top restaurant-style burger that’s perfect for grilling season.


Ingredients

  • 1 1/2 lbs ground beef
  • Salt and pepper to taste
  • 4 slices Swiss cheese
  • 8 slices bacon
  • 4 onion hamburger buns
  • 4 large frozen onion rings
  • 2 large onions, thinly sliced
Garlic Mayonnaise
  • 6 tablespoons mayonnaise
  • 2 garlic cloves, pressed
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon extra virgin olive oil

Instructions

  1. Make the garlic mayonnaise. In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, and 1 teaspoon of olive oil. Season with salt and pepper to taste. Cover and refrigerate until ready to use.
  2. Cook the onion rings. Heat the oil in a deep fryer to 375°F. Fry the onion rings until golden brown and crispy according to the package directions or recipe instructions. Drain on paper towels and set aside.
  3. Caramelize the onions. Heat a little oil in a large skillet over medium heat. Add the sliced onions, cover, and cook for about 30 minutes, stirring occasionally, until softened and beginning to caramelize. Remove the lid, cook for 5 more minutes, then stir in ½ cup water. Continue cooking until the water evaporates and the onions are deeply golden. Set aside.
  4. Cook the bacon. Place the bacon strips in a cold skillet and set the heat to medium-low. Cook, turning frequently, until the bacon is crisp and deep golden brown, about 10 to 15 minutes. Transfer to a paper towel-lined plate to drain.
  5. Prepare the burgers. Divide the ground beef into 4 equal patties and season both sides with salt and pepper. Preheat an outdoor grill to medium-high heat and lightly oil the grates.
  6. Grill the burgers. Cook the patties, turning once, until they reach an internal temperature of 160°F. During the last minute of cooking, top each burger with a slice of Swiss cheese and cook until melted.
  7. Toast the buns. Place the hamburger buns cut-side down on the grill and toast until lightly golden.
  8. Assemble the burgers. Spread a thin layer of garlic mayonnaise on the bottom buns. Top each with caramelized onions, a cheeseburger patty, two slices of bacon, and an onion ring. Spread more garlic mayonnaise on the top buns, place them on the burgers, and serve immediately.
