Sausage and Hash Brown Casserole Recipe

Updated on July 21st, 2025

When you’re planning breakfast for a crowd or want something filling with minimal effort, this sausage and hash brown casserole is a great choice. It layers browned breakfast sausage, crispy hash browns, sharp cheddar cheese, and a creamy egg mixture in one warm and satisfying bake. Everything comes together in a single dish, making it ideal for weekends, holidays, or meal prep. The flavor is comforting and familiar, and the recipe is easy enough for any home cook to pull off without stress.

Why this recipe works

  • Balanced layers of flavor and texture: Cooking the sausage and hash browns first adds depth to the flavor and keeps the base from becoming soggy, while the cheese and eggs tie everything together.
  • Uses staple breakfast ingredients: This recipe doesn’t require anything fancy, just common ingredients like eggs, milk, sausage, and potatoes that are easy to keep on hand and work well together.
  • Ideal for make-ahead meals: You can prep the entire casserole the night before, refrigerate it, and bake it the next morning for a hot and hearty breakfast with no rush.
  • Feeds a group with ease: Baked in a standard 9×13 dish, it yields generous portions that are filling and crowd-pleasing, making it great for family breakfasts or brunch gatherings.

Serving suggestions

  • Pair with fresh fruit or berries: A bowl of sliced fruit or a fresh fruit salad adds a sweet and refreshing contrast to the savory richness of the casserole and helps lighten up the meal.
  • Serve alongside bread or muffins: Warm, buttered toast, flaky biscuits, or even a tray of sweet muffins are perfect additions and make the meal feel more complete.
  • Add something green: If you’re serving this for brunch or lunch, a small green salad or sautéed spinach can be a nice, light way to balance the heavier main dish.
  • Round it out with drinks and extras: Offer coffee, tea, or fresh orange juice, and include toppings like hot sauce, salsa, or extra shredded cheese on the side so guests can customize their plates.
