BBQ Cheddar Stuffed Meatballs
These BBQ cheddar stuffed meatballs are a very delicious dinner to prepare. These meatballs use ingredients such as ground beef, breadcrumbs, egg, milk onion, and garlic. The meat mixture is formed and then cubes of cheddar cheese are pressed into the center of the meatballs. Try and form the meat mixture around the cheese chunks as well as possible to avoid leaks. Chances are some of the cheese will leak out but you don’t want it all too. These meatballs are fully cooked in the oven, no pan-frying is required. The BBQ sauce is homemade and uses common ingredients which you may already have on hand. I like to serve these meatballs with macaroni and cheese. Enjoy.

Ingredients

  • 1 1/2lbs ground beef
  • 3 ounces sharp cheddar cheese (cut into ½ inch cubes)
  • ½ cup finely chopped onion
  • 2 garlic cloves (minced)
  • 1 jalapeno pepper (seeded and minced)
  • 1 tablespoon chopped fresh parsley
  • 1 cup panko breadcrumbs
  • ½ cup milk
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • Sauce-:
  • 2 cups tomato ketchup
  • 2 tablespoons brown sugar
  • ½ cup cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon pure chili powder
  • ½ teaspoon ground black pepper
