Butterscotch Cookies Recipe

Butterscotch Cookies
I haven’t baked in a while and I had the craving for some cookies, butterscotch cookies that is. This is a simple and very easy recipe that uses butterscotch chips, butter, and sugar to give the cookies great flavor. They were so good that as I am writing this article there is none left! This recipe uses crispy rice cereal to make the cookies perfectly crispy with a little crunch but yet still slightly chewy making the texture great. Be sure not to overbake them because they will get kind of hard if you do. There are so many great ways to make cookies and if you haven’t tried butterscotch chip yet give this recipe a try! Enjoy.

  1. i adore butterscotch chips. i realize that they don’t really taste anything like true butterscotch, but i love ’em anyway. in fact, oatmeal scotchies are my favorite cookie. i’ll have to give these a try–there might be a dethroning. 🙂

  2. I can’t believe that they have No flour in them!! They look so good. Thanks for sharing all of these great recipes but I am still waiting for a delivery at my door!!!!!!!!!!!!!!!!

  3. oooh, these look great. Okay, specifically rice crispy cereal or a crispy rice cereal??? Guess I COULD just try it and find out for myself huh? 🙂

  4. The cookies look very delicious,I never heard of using rice Krispies in It,thats different. I’m going to have to buy the ingredients so I can make them, I bet they will be good.

  5. Again thank you! I made these tonight and they are good – taste very much like an oatmeal scotchie – very sweet – i just ate a warm one!

  6. WOW! I just made these and they’re awesome! Nice and crunchy, only thing I might try to add is a drizzle of chocolate across the top, but they’re just perfect as-is!

  7. made these cookies today and they were very tasty… the rice krispies give it a nice crunch. I cant wait to try other recipes on this site!!!

  8. made these last week, Very Yummy Cookies, I added half a cup of sugar instead of the full cup, im making them again tonite 🙂 kids love them!!!

  9. Made 2 batches of these cookies this morning. Delicious. I though it was too sweet so I cut the sugar down to 1/2 C instead of 1 C.

  10. I made these last night. I swapped out half the butter for half as much yogurt and the texture was still perfect! I think I will cut back significantly on the sugar next time as the chips are already so sweet. Also thinking about trying cinnamon chips. But this is a terrific recipe, thank you! The Rice Krispies are a brilliant idea and make the texture so perfect, they add a lovely lightness and crispness to them. My kids love them! I blogged them as well.
