Spaghetti Squash (4 Servings)

Ingredients

Scale

Instructions

Preparing the squash:

  1. Slice the spaghetti squash into two halves half lengthwise using a hefty chef’s knife (see our helpful tips above on how to do this safely).
  2. Deseed the squash with a spoon and throw the seeds away. Drizzle a little olive oil on the sliced side of each half of the squash, then season with salt & pepper.

Cooking spaghetti squash in the microwave:

  1. Inside a microwave-safe baking dish, arrange the squash halves with the cut-side facing downwards. Fill the dish halfway with water, about 1 inch deep.
  2. Microwave the spaghetti squash for 5 minutes, then check it and microwave again for another 2 to 5 minutes, or until the squash is soft enough to puncture with a knife.
  3. As soon as the squash gets done, flip it over and leave it to cool for around 5 minutes with the cut side facing up. To separate the “spaghetti-like” strands/noodles, slide a fork through the fleshy part of the spaghetti squash.

Cooking spaghetti squash in an Instant Pot:

  1. In the pressure cooker, add ½ cup of water and set up a steamer basket or trivet.
  2. Atop the trivet, place the cut squash halves. Close the lid of the Instant Pot, then cook the squash for 7 minutes on high pressure using the “Pressure Cook” or “Manual” function. The timer will not begin to count till the pressure within the pot reaches a certain level, so get ready to wait for a few minutes.
  3. As soon as the cooking time is up, use the quick-release button to release the pressure manually. Take care to keep your face and hands away from the venting steam. It is safe to open the lid as soon as the floating valve at the Instant Pot’s top descends. Because all pressure cookers are not exactly created the same way, we recommend reading the manual that accompanied yours.
  4. Allow the spaghetti squash to cool for 5 minutes before using a fork to remove the “spaghetti-like” strands/noodles from the flesh.
