Unfortunately, I have yet to post a lasagna recipe but I have something just as good- Lasagna Roll-ups. Lasagna roll ups are cooked lasagna noodles rolled up with a cheese mixture and baked in a sauce. If you are not a fan of cottage cheese it could be replaced with ricotta. This dish uses three different types of cheeses- cottage, parmesan, and mozzarella. Donāt worry if you want meat in your meals, the sauce is a meat sauce. The meat sauce is very delicious and slightly spicy. It gets the heat from a little bit of cayenne pepper, you can adjust the amount of cayenne to your taste. This is a fantastic dish to bring to a party or even to have as a meal. Serve with garlic bread. Enjoy.

Ingredients

- Sauce-
- Ā¼ lb ground beef
- 2 tablespoons onion (chopped)
- 2 garlic cloves (minced)
- 1 (16 oz) can crushed tomatoes
- Ā½ teaspoon salt
- Ā½ teaspoon dried oregano
- 1 dash cayenne pepper (or more to your taste)
- Filling-
- 1 Ā¼ cups small curd cottage cheese
- Ā¼ cup grated parmesan cheese
- 1 egg (lightly beaten)
- 1 tablespoon fresh parsley (minced)
- Ā¼ teaspoon onion powder
- 6 lasagna noodles (cooked)
- Ā½ cup shredded mozzarella cheese
Instructions
- In a large skillet cook ground beef, onion and garlic until the beef are no longer pink. Drain any excess fat from the pan.
- Add tomatoes, oregano, salt, and cayenne.
- Simmer for 10 minutes. Spread half of the meat sauce on the bottom of a greased 9ā baking dish.
In a bowl combine cottage cheese, parmesan cheese, egg, parsley, and onion powder. Spread a Ā¼ cup of the cheese mixture evenly over each lasagna noodle. - Roll up and place seam side down in rows in the baking dish. Top with remaining sauce.
- Bake in the oven at 375 degrees for 30-35 minutes.
- About 5 minutes before the dish is finished cooking remove from the oven and top with shredded mozzarella cheese.
- Return to oven and cook until cheese has melted.

It must have been the pictures, but I made these the second I saw them yesterday. I had to run to the store to get a few ingredients, but I live close by, so it was easy. Until I realised I bought sour cream, instead of cottage cheese. *Grumbles* Back to the store again.
But even with my own complications, this turned out yummy, and super easy! I added spinach to the cottage cheese mix, because, well.. I love spinach. And I suspect these would make up vegetarian really well!

The Lasagna Roll-ups were delicious and easy to make. The small amount of cayenne was a wonderful addition. I used a little more than a half pound of ground beef because that is what I had frozen and a 14.5 oz. can of diced tomatoes because that is what I had on hand. That kind of messed the sauce up because it wasn’t as saucy, so to remedy that, I added a small can of tomato paste and 2 tsp. of sugar. I really liked this recipe because it was just the right size instead of a big pan of lasagna. Your presentation photo makes this recipe irresistible! Thanks for sharing this recipe.
Sorry I didn’t like the taste of the Lasagna Roll-ups. I’ll Stick to my Lasagna recipe.

Wow! So many comments! But I understand why because I made these last night and they were absolutely wonderful! I doubled the recipe so I could have some for lunch the next day and they actually microwaved really well. All my co-workers were very jealous and commented about how good they smelled. Of course I didn’t share though =P

Anu – I am sorry, I am not too familiar with vegetarian dishes. You could try tofu or just leave out the burger.

These look delicious, I always add cream cheese to the cottage cheese when I make lasagna, add good flavor to the cottage cheese.
Do you half to add the egg in with it ? and what does the egg do for it ?
cindy lou- The egg helps to bind everything together but you may be able to leave it out. If you try it without the egg, please let everyone know how it turns out.
These were absolutely delicious. I was pushed for time so I used the jar sauce (still added the meat). It was so, so simple and the presentation was beautiful. Definitely a keeper of a recipe!
