I love to marinade chicken and then prepare it on the grill during the summer. This grilled chicken with watermelon salsa is absolutely delicious. The chicken is marinated in a few very simple ingredients such as soy sauce, garlic, and honey. I usually allow the chicken to marinate for about 2-3 hours. Once the chicken is done marinating it is grilled and then topped with fresh watermelon salsa. The salsa is a combination of watermelon, cucumber, jalapeno pepper, cilantro, and green onion. The salsa is seasoned with salt, pepper and lime juice. I like to serve this chicken with a cold salad on the side. Enjoy.

Ingredients

  • 1lb boneless skinless chicken breasts
  • Marinade-
  • ¼ cup soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon honey
  • 4 garlic cloves (crushed)
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground ginger
  • Salsa-
  • 1 ½ cups chopped watermelon
  • 1 small cucumber (peeled, seeded and chopped)
  • ½ jalapeno pepper (minced)
  • 2 tablespoons chopped cilantro
  • 1 green onion (chopped)
  • juice of 1 lime
  • drizzle of honey
  • salt and pepper (to taste)

Instructions

  1. Pound the chicken breasts to an even thickness. In a large bowl whisk together soy sauce, oil, honey, garlic, red pepper flakes, and ginger. Add the chicken breasts and coat with the marinade. Cover the bowl (the mixture can also be added to a sealable plastic bag and the chicken can be marinated in there). Place the chicken into the refrigerator and marinate the chicken for 2-3 hours.
  2. Lightly grease the grates of an outdoor grill. Preheat the grill to medium-high heat. Remove the chicken breasts from the marinade and place onto the grill. Grill over medium-high heat for 3-5 minutes per side until the chicken is fully cooked (the internal temperature has reached 165 degrees F). Let rest for 5 minutes before serving.
  3. Combine all of the salsa ingredients in a bowl and then spoon over the grilled chicken.
