Fried Bologna Sliders Recipe

If you have never tried fried bologna, now is a great time with this delicious slider recipe. These sliders are loaded with fried bologna, mustard, garlic aioli, and fried onion strings.

The fried onion strings add a nice crunch to this recipe. The garlic aioli delivers a burst of flavor, too.

I like to cook the bologna on a griddle so I can prepare several slices at ounce. These sliders are great as an appetizer to prepare for game day.

Ingredients

Units Scale
  • 8 small rolls, split
  • 8 thick bologna slices, cut into quarters
  • 3 tablespoons canned fried onions
  • 2 tablespoons mustard

Garlic Aioli

  • 1/2 cup prepared mayonnaise
  • 2 garlic cloves, peeled and minced
  • 1 1/2 tablespoons lemon juice
  • Salt and pepper to taste
  • 8 dill pickle chips

Instructions

  1. Make the aioli. Whisk together mayonnaise, garlic, and lemon juice. Season to taste with salt and pepper. 
  2. Toast the buns. Preheat oven to 400°F or 204°C. Place rolls, cut sides up, on a baking sheet. Bake 6-8 minutes or until lightly toasted.
  3. Fry the bologna. Heat a large skillet over medium heat 1 minute or until hot. Add bologna, and fry 2-3 minutes on each side or until browned. Drain on paper towels.
  4. Assemble sliders. Spread aioli generously on the inside of the bun tops. Spread mustard on the inside of the bun bottoms. Layer bologna and fried onions on roll bottoms. Cover with roll tops, and serve.

  1. There are a lot of ingredients that didn’t get used. I was looking forward to a little more complicated flavor.
