I always enjoy a good Mexican recipe and these beef quesadillas made a simple and delicious dinner. I actually prefer using ground beef in quesadillas because it is a little easier than using chicken or steak. These quesadillas use a burrito-style filling which consists of taco seasoned ground beef, refried beans, and green chilies. You can use whatever type of cheese you like but I prefer Mexican cheese blend. These quesadillas go great served with salsa, guacamole, and sour cream. If you are looking for a dinner that is very easy to prepare, this is the one! Enjoy.

Beef Quesadillas Recipe
Ingredients
- 1lb ground beef
- ½ cup refried beans
- 1 (4 ounces) can be chopped green chilies (drained)
- ½ teaspoon dried oregano
- ½ teaspoon ground cumin
- 2 teaspoons chili powder
- ½ teaspoon salt
- 4 (8 inches) flour tortillas
- Butter (for spreading)
- 2 cups Mexican cheese blend
Instructions
- In a large skillet, cook ground beef over medium heat until no longer pink. Drain any excess grease. Stir in dried beans, green chilies, oregano, cumin, chili powder, and salt. Cook over medium-low heat for 3-4 minutes or until heated through.
- Heat another skillet to medium-low heat. Brush one side of a tortilla with butter, place butter side down into the pan. Evenly sprinkle cheese over the top of the entire tortilla. On one half on top of the tortilla, add some of the meat mixtures. Cook until the bottom has browned and the cheese has melted. With a spatula fold the half of the tortilla without the meat mixture over the half with the meat mixture and press down. Remove from the pan. Repeat with remaining tortillas.
- Cut into wedges and serve.

Somebody in my family is going to love this. Thanks for sharing.
You know what? I think I’d prefer ground taco beef filling inside my quesadilla over strips of meat, too. Great idea, thanks.
Thanks so much for the great recipe. What great comfort food!
Been cooking blog chef recipes for awhile. They’re all good, but this is one of the better ones. Interesting mix. Great taste.
We made this recently, it was lovely. Quick and easy to make. We’ve posted our adaptation of the recipe, with a link back to your site, over at https://thejoyfulsoul.wordpress.com/2012/07/16/beef-quesadillas/ Thank you for sharing the recipe with us!

I needed a quick recipe tonight, and an easy one.
These were GREAT!!!!!!
(I didn’t have the chopped green chilies, so I put the entire can of refried beans in.)
My boyfriend was very happy! I can’t believe how easy and fast it was.
Thank you!
I found your recipe through a Google search. I made these for dinner tonight, following the recipe exactly, and they were fantastic!
Do you think taco seasoning might could be used and get the same taste or close to it? I have a pkg of taco seasoning but not the other spices you mentioned.
Thanks so much!
Jill – Yes, taco seasoning could be used in place of the spices.
I found these on Pinterest, made them and they were great. My husband doesn’t really like ground beef recipes, but he did love these.
Thanks
This was delicious! I usually cook my beans in bacon so that’s the only thing I changed!
I was looking for something quick and kid friendly. These were devoured at the dinner table and the family was begging for more. Thanks!
