- Take out your pork and dry the skin if wet. Ensure that it’s well dried before you start cooking.
- Preheat the oven to 480° F and mix all spices for pork rub and set aside.
- Score the skin of the pork if it’s not already scored. Do this carefully so you don’t cut the strings on the pork.
- Using a brush, apply olive oil on the skin of the pork toast thoroughly. This allows the salt to stick to the skin. Sprinkle some sea salt on the pork.
- Insert thin slices of garlic and some herbs into the skin of the pork. Then, take your seasoning rub and sprinkle on all areas of the pork, including the bottom. Do this gently so the garlic doesn’t fall off.
- Place the pork in the oven and leave for 30 minutes.
- After 30 minutes, lower the temperature to 375° Fahrenheit and continue roasting for another 35 minutes.
- When the 35 minutes is over, take out the meat and test with a small knife to see if it’s ready. Insert the knife into the thickest part of the meat and check the color of the juice that runs out. It should be completely clear, if the juice isn’t clear yet, continue cooking until it runs clear.
- After you’ve confirmed your pork roast is ready, remove it from the oven and leave it to rest for about 15 minutes before you start carving. Remove the strings from the roast.
- You can now carve your pork roast and serve. You can serve it with apple sauce, gravy, salads, potatoes, or anything you’d be cooking alongside it.
