Short rib poutine is comfort food at its best, bringing together crispy fries, rich gravy, melty cheese curds, and tender beef. Slow-cooked short ribs add a savory depth that makes this dish extra hearty and satisfying. The gravy is easy to make right in the slow cooker, soaking up all the flavor from the beef as it cooks. With very little effort, you end up with a dish that feels restaurant-worthy but is simple enough to enjoy at home any night of the week.
Why this recipe works
- Slow-cooked beef: Short ribs simmer for hours until they’re tender and juicy, giving the dish a rich, meaty flavor that stands out.
- Simple gravy: Made directly in the slow cooker, the gravy picks up all the beef drippings and seasoning, creating a sauce that ties everything together.
- Classic poutine upgrade: Traditional fries, cheese curds, and gravy get a boost from the shredded beef, making it more filling and flavorful.
- Minimal effort: Everything cooks low and slow, so most of the work is hands-off while the flavors deepen on their own.
- Crowd favorite: This combination of crispy fries, gooey cheese, and savory beef is one everyone at the table will want to dig into.
