Juicy oven-cooked 3lb roast beef (9 servings)

Instructions

  1. If your roast is in the refrigerator bring it out and let it sit for an hour before working with it.
  2. Mix the dry spices and use them to rub on the meat along with some olive oil.
  3. Place a heavy roasting pan over high heat and add some cooking oil or butter in it, after letting it heat for a few minutes put the seasoned meat inside and sear both sides each for 2 minutes to get that fine brown color.
  4. Chop the fresh vegetables listed above and keep them aside, then remove the meat from the tray and put the veggies in the tray. Shake and mix the veggies with the leftover oil at the bottom of the tray.
  5. Place the seared meat on top of the veggies and cover with aluminum foil.
  6. Take it to the oven and bake for about 3hours or until it gets to the internal heat temperature of 145° F – 160°F for well done.
  7. When it’s ready bring it out and let it rest for some minutes, use the leftover veggies in the tray to make the sauce.
  8. Place over high heat and start by mashing the veggies then add about a tablespoon of flour to thicken the sauce, sprinkle some onion soup mix over the roast, also pour a cup of beef broth, you could also add some red wine for flavor.
  9. You can add any additional seasoning you’d like and after all that let it simmer for 30 minutes. Sieve the gravy and boil for a few minutes then slice your roast and serve with gravy.
