Choosing the Ribs
Country-style ribs are derived from pork and are rib chops from the loin’s shoulder end. Though they’re not true ribs, these chops are known for having an ideal amount of meat; notably more than found on baby back ribs. Surprisingly, country-style ribs are also quite affordable, mostly cheaper than baby back ribs, making them perfect for those who love more at a lesser price.
Country-style ribs mostly come as boneless long chunks of meat, but you may find some bone-in varieties as well. But while you gain a decent amount of tissue with these rib chops, it helps to always go after those with a nice marbling for extra moisture and tenderness.
Seasoning Country-style Ribs
Combining similar spices and seasonings for grilling is what makes instant pot Country-style ribs so delicious. It’s why you’ll find many recipes with options such as black pepper, honey, ground mustard, brown sugar, soy sauce, garlic powder, paprika, and onion powder. These ingredients combine a blend of sweetness and savour, resulting in a fantastic result. But while they’re best known as dry rubs, the instant pot employs steam meaning a wet cooking environment.
These ingredients are used as a marinade in which the ribs sit and soak the flavour. Among the ingredients combined for this purpose is apple cider vinegar, an acid renowned for its tenderizing properties. As the Country-style ribs sit in the marinade, the vinegar softens the tissues, allowing the recipe to cook faster and offer more juiciness. Some prefer to use lemon juice for this purpose, but it’s not as effective as vinegar.
Making a marinade for country-style ribs can be messy, which is why you can keep it within the instant pot. The container can sit in the fridge for the waiting period, and when it’s time, simply take it out, cover it, and cook. You can also use Ziploc bags for the marinating process; put the ingredients and ribs in, seal, shake, and keep in the fridge. And when it’s time, transfer the contents into the pot and cook!

Cooking Time
Once the meat is marinated, cover the instant pot and seal the vent. Then, set the program on HIGH for 15 minutes and wait until the timer goes off. Afterward, let the instant pot sit for another 10 minutes, so the pressure needle drops to zero before you cautiously unseal the vent. Then, open the pot, and your Country-style ribs are ready.
Country-style ribs are best enjoyed with BBQ sauce, and you can make some yourself or use a bottle of your favourite brand. And for a tastier experience, take the ribs out after cooking, coat them in BBQ sauce, and broil for a few minutes, so the sauce caramelizes over the Country-style ribs. Then, serve with your favourite sides and enjoy! It’s that easy!!
