- Add the gluten-free wheat
This is the source of the texture. When the wheat gluten comes into contact with the creamy liquid ingredients, it will hydrate, and as you continue to combine, it will form an extremely flexible, stringy dough.
It will not appear appetising at this stage, but believe me when I say it will be!
It’s time to shape the dough into chicken “breasts” or “fillets” now that we have a nice, smooth, flexible dough. Yes, they do resemble miniature potatoes. However, the goal is to help the seitan steam more quickly.
Once you’ve produced 8 seitan fillets, wrap them in greaseproof paper or muslin as securely as possible before placing them in the steamer. FYI, all seitan must be cooked twice. To help the seitan form its shape and improve the texture, cook it alone the first time. The second time is when you incorporate it into your dish.
- Steam it
We’re going to steam our seitan for the first time. Seitan is ideal for steaming since the “meat” is thoroughly heated, resulting in a nice, uniform texture. Unlike boiling, this method prevents the seitan from absorbing too much liquid and turning into a soggy sponge. Instead, it remains succulent and meaty.
- Make it marinated
This is where things start to become REALLY meaty. Now that we’ve produced a nicely textured vegan chicken, let’s add some flavour. The wine, miso paste, and sugar combination brings out all of the natural umami flavours in the seitan while also tenderising it.
Before marinating the vegan chicken “fillets,” it’s a good idea to cut them in half. This will help them absorb more flavour.
- Use as if it were real chicken
You can use this vegan chicken as if it were genuine chicken once it has been marinated. You might use it to make butter chicken or even tikka masala. You could rip it into wings and cook it for the finest vegan fried chicken sandwich you’ve ever had! Your oyster is the entire globe!
